(Chicken and) Corn Fritters with Black Bean Salsa

This has been on my must-try list for a while!  Chicken with Black Bean Salsa has been bookmarked for way too long, but I never knew what the veggie version could include.  Thank you Good Housekeeping for introducing me to Corn Fritters!  I combined and tweaked each recipe and voila… easy to make and delicious dinner for vegetarian and omnivore alike!

Breakfast Potatoes with Pepper and Onion

If I had time to roast potatoes for breakfast every single morning, I would.  No doubt.  Unfortunately I don’t have the will power to roll out of bed 45 minutes earlier than I already have to – waking up at 4:45am is enough of a struggle as is!  But whenever I make these dreamy potatoes, I always make enough for Monday morning leftovers.  What could be a better way to beat the Monday Morning Blues than to wake up to some awesome breakfast potatoes?

Gotta have some toast and eggs with these potatoes! (plus a farm fresh pear)

Cabbage Coleslaw with Pineapple Salsa (and Shredded Beef)

At least 3 nights a week I am trying out a new dinner recipe.  Some are my own concoctions, but most are from other food blogs and websites.  Before each new cooking adventure, I imagine how perfect this new meal will be… delicious and filling and oh-so-good!  But in reality, many are not all that exciting.  About 2 weeks ago, I had some pretty bad luck with new recipes, not once, not twice, but three nights in a row! We were having a bowl of cereal instead of seconds and turning to a nice bowl of ice cream before we started to feel full.

Fresh off of that less than exciting week of food, I was skeptical about trying this recipe.  Mostly because I have not had great experiences with cabbage.  However, the lure of a quick and easy meal won me over and Kalyn’s Kitchen has so many delicious recipes!  So I gave it a try…

How could this be bad when it looks this good???

I ended up changing quite a few things because I didn’t have all of her ingredients on hand, but the result was surprisingly good!  While I can’t promise that there won’t be duds on our dinner table from time to time, I can promise that I will be making this again, because it was unique, delicious, and soo simple!! Pesto Risotto

I put risotto, Sun-Dried Tomato Risotto to be specific, on the menu for our first week in VA, and I was SO excited to have it for dinner!  Ever since doing food tasting for our wedding, I have been in awe of the creamy, delicious-ness that is risotto!  The caterer brought out this rich and luscious butternut squash risotto, and I was sold on both the caterer and this amazing food called risotto I had never tried before.

Squash, Red Pepper, and Tomato Gratin

I have wanted to make a gratin for a while.  First of all, gratin [gra-teh(n)] sounds super fancy, so if you tell someone you are making them a gratin, they will immediately think you are an amazing cook.  Secondly, what is not to love about a gratin… cheesy goodness with a crisp breaded top… amazing!

Unfortunately, every time I ran across a recipe for one (or even worse, a scrumptious-looking picture), I would think, Ooo, that looks soo good, but Adam would definitely despise this.  Cooking without cheese really limits what is available to make.  But why am I complaining, I cause even more problems being a vegetarian! Broccoli and Asparagus Soup for Fiesta Friday

I’ve decided to join in on Fiesta Friday!  For more information about it, check out The Novice Gardner.  I discovered Fiesta Friday through one of this week’s host Butter, Basil, and Breadcrumbs – she posted this amazing-looking Molten Lava Cake, and I couldn’t resist checking it out!  To celebrate Friday, spring time, and asparagus, my contribution to the Fiesta is Broccoli and Asparagus Soup.

I have been on an extremely almost-obsessive asparagus kick for the last month!  Hey, if they’re only in season for a few months, why not take advantage of it?  I currently have 3 pounds of asparagus in the fridge, but some of it is for others too…

Roasted Rosemary Potatoes and Asparagus

2014-04-20 14.46.33I love asparagus! I love asparagus! I love asparagus!! Have I mentioned that I love asparagus?  I love it so much that I never order it at restaurants because I know that they will only give me 4 measly spears, and all I will be left thinking about is how I want more!  Each week, I buy a pound of asparagus, and between me and Adam, it is gone in one night!
