Hi, my name is Becca!  I’ve been a vegetarian since 2004, almost 10 years.  Eating at home with my parents, my “vegetarian diet” consisted of homemade mac ‘n cheese (which is delicious!!), veggie burgers, or eggs instead of the meat my family would be eating.  In college, 90% of my diet become pasta and cheese and every variation of that you can think of (stuffed shells, lasagna, ziti, etc).  And then I met Adam, an omnivore if there ever was one!  His meals were either taco meat or Mini Chicken Tacos from Trader Joe’s.  Boy were we in trouble!

The first time we cooked dinner together, we had to think long and hard about what to make!  What could we make that would have meat and no meat and did I mentioned that Adam hates cheese!?…  Needless to say we eventually found some dishes from a vegetarian cookbook that Adam could add meat to.

We got married in January 2014.  Since then, I have been having fun thinking of creative and delicious meals that satisfy both a vegetarian and a meat-eater, and let me tell you – Adam has a ridiculous appetite!  Very soon, he will begin training with the Marines… I am scared to think of how much he will eat then!

I hope you learn a little something – I know I am learning a lot – from the chronicles of my “half-vegetarian” kitchen!
